About the vacancy

The Chef de Cuisine is the single point of accountability for the Restaurant kitchen.

This role is responsible for the culinary vision, operational leadership and day-to-day performance of the restaurant, including regular service, events, special occasions and associated activations.

The Chef de Cuisine ensures exceptional food quality, consistency, food safety, financial performance and team leadership.

All kitchen staff working within the Restaurant report directly to the Chef de Cuisine.

The Chef de Cuisine also supports the Executive Chef as a 2IC with leadership and delivery as required across other areas of the hospitality business including but not limited to foyer operations, functions, and events.

Responsibilities
  • Lead menu development, seasonal changes, tastings and continuous improvement initiatives.
  • Develop menus with accurate costings and target margins.
  • Develop, own and execute the culinary identity and menu for the Restaurant in alignment with the overall food vision set by the Executive Chef.
  • Maintain comprehensive and up to date product knowledge including ingredients, equipment, suppliers, markets and sustainability practices.
  • Manage ordering, receiving, storage and stock control to minimise waste and loss.
  • Ensure consistent excellence in food quality, presentation, taste and portion control.
  • Plan, coordinate and supervise food production for lunch, dinner, events and special occasions associated with the Restaurant.
  • Control and analyse food cost, labour cost and kitchen productivity.
  • Ensure effective rostering aligned with business levels and budget targets.
  • Participate in monthly reviews of sales, costs, labour, quality standards and guest feedback.
  • Ensure all food preparation is economical, technically correct and delivered within agreed budgets.
  • Maintain the cleanliness, organisation and operational readiness of the Restaurant kitchen and equipment.
  • Recruit, lead, train and performance-manage all kitchen staff within the restaurant.
Competencies and Skills
  • Commercial Cookery Certificate or equivalent
  • Significant experience as a senior chef in a significant catering or sizeable restaurant operation.
  • Demonstrated ability in monitoring and controlling cost / profit relationships in above environment.
  • Experience in rostering, managing, motivating and training staff.
  • Ability to work calmly and purposefully while under pressure.
  • Experience in the design of menus, costings, developing new dishes and organising special events.
  • Proven ability to develop, implement, monitor and maintain consistent standards relating to quality, presentation and hygiene.
  • Ability to consult, collaborate and effectively communicate and provide advice to a broad range of people in a range of contexts.
