We are seeking a Full‑Time Cook to join our busy Malaysian restaurant, Jalan Alor Mitcham. This role requires strong practical cooking abilities, particularly in preparing and handling authentic Malaysian dishes using traditional techniques, spices, and ingredients. The ideal candidate will have experience working in a fast‑paced kitchen and the ability to maintain consistency, speed, and quality across all service periods.

• Perform daily mise‑en‑place, including preparation of ingredients, sauces, spice blends, and base components commonly used in Malaysian cuisine.
• Operate commercial kitchen equipment and Malaysian‑specific cooking tools (e.g., woks, steamers, stockpots) safely and efficiently.
• Monitor ingredient freshness—especially herbs, spices, aromatics, noodles, meats, and broths—to ensure authentic taste and quality.
• Maintain stock levels, report shortages, and assist in managing inventory for high‑turnover Malaysian ingredients.
• Coordinate with kitchen staff to maintain smooth service flow during peak hours.
• Ensure compliance with strict food safety, hygiene, and cleanliness standards.
• Maintain consistency in flavour, texture, and presentation of all dishes served.

• Strong practical cooking experience, ideally in Malaysian, Southeast Asian, or wok‑based cuisine.
• Ability to handle high heat wok cooking, fast‑paced stir‑fry methods, and preparation of Malaysian staples (e.g., laksa bases, char kway teow, rendang, nasi lemak components).
• Understanding of spice balance, aromatics, and flavour layering that characterises Malaysian cooking.
• Ability to work efficiently during high‑volume service and maintain dish consistency.
• Excellent teamwork and communication skills.
• Reliability, attention to detail, and commitment to food quality.
