About the role

Head Chef wanted for the new Hideki Restaurant ! You will be responsible for leading and overseeing the culinary operations of our prestigious new restaurant in the heart of Brisbane. Hideki will be aiming to be an award winning and trendy new Japanese venue amongst the local foodies! This is a full-time role based in our Brisbane James Street location. You will be instrumental in crafting exceptional dining experiences for our guests, driving innovation in our menus, and fostering a passionate and talented culinary team.

What youll be doing

  • Develop and implement creative, seasonal menus that showcase the finest local produce and innovative cooking techniques

  • Oversee all aspects of kitchen operations, including food preparation, plating, and presentation

  • Manage, train, and motivate a team of skilled chefs and kitchen staff to ensure the highest standards of quality and efficiency

  • Collaborate with the restaurant management team to ensure exceptional customer service and a seamless dining experience

  • Monitor and maintain inventory, food costs, and kitchen budgets to optimise profitability

  • Stay up-to-date with industry trends and implement new cooking methods and technologies to enhance the restaurants culinary offerings

  • Ensure compliance with all food safety and health regulations

What were looking for

  • Minimum of 2 years of experience as an Head Chef or in a similar high level senior culinary role

  • Experience in Japanese cuisine

  • Minimum of 2 years experience in authentic Japanese cuisine, particularly in sushi and kaiseki preparation

  • Proven track record of leading and developing high-performing culinary teams

  • Exceptional culinary skills, with a deep understanding of global cuisines and a passion for using fresh, local ingredients

  • Excellent problem-solving and decision-making abilities, with a keen eye for detail

  • Strong business acumen and financial management skills

  • Excellent communication and interpersonal skills, with the ability to collaborate effectively with various stakeholders

  • Relevant qualifications in culinary arts or hospitality management

  • Demonstrated knowledge and experience implementing HACCP food safety systems
